मनुष्य के शरीर में भिन्न-भिन्न कार्यों के लिए अलग-अलग प्रकार की कोशिकाएँ होती हैं। एक ही प्रकार की बहुत-सी कोशिकाएँ मिलकर जो संरचना बनाती हैं, उसे ऊतक कहते हैं।
एक ही तरह के बहुत से ऊतक मिलकर शरीर के अंग विशेष का निर्माण करते हैं। उदाहरणार्थ—मस्तिष्क के निर्माण में तंत्रिका कोशिकाएँ भाग लेती हैं। ये पहले ऊतक बनाती हैं और ऊतक मिलकर ही मस्तिष्क और तंत्रिका तंत्र का निर्माण करते हैं। इसी तरह पेशीय ऊतक, शरीर की पेशियों का निर्माण करते हैं। सम्बन्धित रचना के अनुसार ऊतकों के भी कई प्रकार होते हैं, जैसे संयोजी ऊतक, जो शरीर के अंगों को परस्पर जोड़े रखता है। अस्थि ऊतक जो अस्थियाँ बनाते हैं। उपकला ऊतक त्वचा या अंगों की ऊपरी पर्त का निर्माण करता है। बहुत से ऊतक मिलकर शरीर के अंग और विभिन्न प्रणालियाँ बनाते हैं और इन अंगों और प्रणालियों से मिलकर पूरा शरीर बनता है।
